Botanical and chemical of saffron
The scientific name of saffron is crocus sativus and it is a bulbous and herbal plant and saffron lifespan is between 7 to 10 years. Bulb of saffron belongs to corm family and the color of its brown. Each bulb produces between 6 to 9 thin herbal leafs. From each corm in autumn grow one or two pink or purple colored flowers. Pistil of saffron flower is in the center of it and has an ovary that the thin and yellow style grows in the ovary and it has bright red colored stigma with 20 to 30 mm length. Stigma is the edible and commercial part of saffron. Stigma has a lot of chemical component like carbohydrates, mineral, vitamins, color pigment (especially crocin), essence (especially safranal) and flavoring substances (especially picrocrocin).
